Downtown Seattle

We'll be passing through Seattle at the end of June in order to get on a big boat to go to Alaska, and we'll be departing from Terminal 30 on the waterfront on a Sunday.

We'll be leaving relatives in Portland and coming up on the Train on the Saturday before, and would like recommendations for:

a) Saturday evening dinner, and
b) Sunday morning early breakfast / brunch / dim sum.

Places that serve organic, hormone-free beef, or have organic/local ingredients will get a bump of half-a-star from us in our considerations, but ultimately we want a place with great food, a good atmosphere (waterfront would be nice, presumably they have restaurants on the waterfront), fabulous service, and a good wine list for dinner.

For breakfast / brunch / dim sum on Sunday, we want some place open fairly early with quality food.

We are very fortunate in that we live in Chapel Hill, NC, and have some excellent restaurants around here, and hope to experience a taste of Seattle's finest.

I've been perusing the Pacific Northwest board, searching under "Seattle", and will continue to do so, but when you've never been to Seattle, trying to figure out where things are is apparently a test in itself. We would *strongly prefer* to stay downtown / along the waterfront. We plan on having a hotel within a mile or two of the train station / terminals / waterfront, and don't want to be cabbing far.
