Why can't I double my split-pea soup recipe??

I have an amazing recipe for split-pea soup with smoked turkey thigh. Since we manage to finish all the soup within a day or two, I've tried to double the recipe but the soup always ends up thin and watery.

The recipe calls for the smoked turkey meat to be boiled in water. The meat then comes out of the water, and the split-peas go in, along with onions, garlic, bay leaf and pepper. Once the peas are cooked, the soup is pureed and the meat is added back in.

I've made the "single" recipe countless times and always end up with a nice thick soup, but I just tried doubling the recipe for the second time today and once again, it didn't work. I tried increasing the cooking time once the split-peas were added from 90 minutes to 120 minutes, but that didn't help.

Any other suggestions??
