Double Fry Method on Turkey

Double Frying is a great method for cooking, especially to get that crispy skin on chicken while making sure inside is cooked all the way. I was wondering if anyone has ever thought of frying a whole turkey a day ahead at low temp like 250 degrees Fahrenheit until fully cooked, and then flash frying it the next day at a much higher temp like 375-400 the next day in order to brown and crisp the skin before serving Thanksgiving meal?
I want to try this method, but was wondering if any Deep Fry experts had any experience with this technique. I have used this method on whole chicken with good results but never on a large turkey.
