Ok to double caramel corn-type recipe?

Yesterday I made a recipe for Maple Pecan Popcorn from the latest issue of Gourmet. You had to boil maple syrup, butter and some salt until it reached 300 degrees then dump it over popcorn and nuts.

I would like to make it as a gift, but it didn't make all that much. I've never made anything like this before and want to know if its safe to double or even triple the ingredients and make a huge batch all at once.
