Cookware 42

Double Boilers

I found myself suddenly aware that I no longer had a double boiler since replacing old cookware and needing to melt chocolate, so I got online and saw that there were a few universal ones, and a few that include the matching pans. I didn't want a huge one, so I settled on the Calphalon 2 1/2 qt. with the pan and lid. It arrived today, and because I ALWAYS have horrible luck with online orders, the top part literally rocks ever so slightly but annoyingly kind of like a 'penny that you drop and it continues to spin kind of thing'. I guess I will return it and re-order it since I like the idea of the 'all in one unit' idea. In the meantime, I'm also very curious about these universal ones, like the one that Nordic ware sells (in particular), but it doesn't have a pouring spout like some do, and then it occurred to me-why not just buy a cheap stainless mixing bowl from Walmart and stick it over the top of one of my pans-will that work? I feel like that old grandpa sitting at the table in 'Moosnstruck'-'I'm so confused' lol. Any other ideas or input from candy makers out there?
