I am not a huge fan of store bought rotisserie chicken...but I can't pass it on when I am at Costco. It's cheap and it's convenient for a working mom like me. Plus it's relatively healthy and offers good quality of protein.
Over the years, I adopted and learned to make it into something more exciting and tasty.

Last night, I made chicken with mushroom alfredo sauce. I had a jar of Mario Batali's alfredo sauce (I highly recommend this, so tasty!), and cremini mushroom. I sauteed chopped cremini mushroom then added a jar of the alfredo sauce and then added large chunks of rotisserie chicken. It was so so good.

I also simply pan fry the large pieces of hand pulled rotisserie chicken in saved bacon fat or duck fat then add my favorite herbs and spices like za'atar and herb de provence until the skin ad meat are nice and crisp.

I also make a chicken noodle soup in my instant pot. I add chopped vege and add wild rice.

I shred the chicken meat and make it into taco with sour cream, avocado, tomato and cilantro.

With a side of simple salad, I have dinner in about 30 min.

Anyone else have simple tips and ideas with rotisserie chicken?
