Best dish with swallow or bird's nest?

Ok, so I'm at Fat Wongs again this week and decide to get more adventerous and try the jook with abalone and swallows nest. Margaret wasn't kidding when she said the dish she had didn't have much swallow's nest.

I think the swallow dunked the nest in the jook and took it back to Capistrano. It was missing.

Maybe swallow's nest is really a colorful description of something else? It has nothing to do with swallows?

So now I want to try swallow's / birds nest (as long as it is environmentally ok).

Fat Wong's did have a dessert of swallow's nest and milk. I was thinking it would taste like a Chinese version of shredded wheat.

So, what's a good place to sample this? Is swallow's nest any better than generic bird's nest? What is the allure of bird's nest ... texture? ... flavor?

Do the nests of different birds taste different?

Are birds nest local or do they come from a specific place in China?
