ive always gone to modern for my macaroons, but a friend had been raving about the pistachio macaroons at mikes, so i decided to give them a go today. happy conclusion these macaroons are powerfully good, a revelation of contrasting textures. when I put one to my mouth, for an initial moment, I get just a whiff and a taste of sweet by the powdered sugar coating. then comes the nutty crispy shell, which soon graciously collapses in my mouth to yield to its moist, crumbly, and sweet insides. final surprise: camouflaged chunks of pistachio keep the textures lively and reintroduce the flavor more boldly. since the macaroons are fairly big, they can accommodate at least two (or three conservative) bites. this means, of course, that you get to experience this succession of textures more than once with each macaroon. not your average cookie.
if you go, be sure to choose the right ones from the case. there are some traditionally round, crackled-top amaretti with crushed pistachios on top don't get these. look for the funnier-looking ones the misshapen, lumpy ones in an alarming shade of neon green. buy a big bag. (sadly, I have none left.)
