Discolored Beets

I bought those fun candycane beets, red and white striped. I roasted them with olive oil, garlic, lemon. Normally I get regular beets- gold or red. This evening my beets became black and spotty. They look like I left them in an outdoor shower for a couple of weeks.
They taste fine. Why?
I suspect the lemon is the culprit. Usually she makes the color last.
