My cousin just moved with her husband and two dogs cross country and are now living near me. They just got here and are currently sorting through the mess of boxes and trying to set up their new apartment. I just visited them tonight and they were lamenting on the fact that they have been eating road food for the past week and a half and can't wait until they can get settled, grocery shop, cook, and eat fresh, healthy food.
I thought it would be nice to cook something so they didn't have to eat out every meal during these next days while the rest of their belongings arrive. I'm not sure what to make. I want to make a simple, light, healthy supper for them but for some reason I can't think of anything!
Any ideas? No food allergies or real food preferences. My cousin doesn't eat a whole lot of meat but isn't vegetarian so there are really no restrictions. I have an abundant supply of grocers and cooking equipment....just need some ideas!
They have both an oven and microwave already set up for re-heating.
