I just got back from dropping off all the food for the class. Everyone seemed very happy to see the abundance my husband and I brought in. Apparently, the past few weeks there hasn't been enough food to feed everyone. I think a lot of people don't realize how much it takes to make a complete meal for 30 hungry people. I so appreciate all of the ideas people gave me, and even though I kind of went out on my own, your ideas helped jump start my thinking. And I will save the recipes you sent me for another time. This board is great!!
Here's what I made:
Gazpacho -- 1 gallon with cilantro; 1 gallon without
Tortilla Tower (like a taco casserole) -- 3 deep 9X13 pans
Refried Beans (I had to use canned this time....oh well...)
Varioius condiments -- hot sauces, salsa, HUGE bowl of guacamole, sour cream, olives
Mexican Brownies -- 1 double batch with nuts; 1 double batch without
Mexican Wedding Cookies
Caramel Matzoh Crunch (I had to get more people addicted!!)
Someone else provided a large salad.
It was fun to do this, and I spread it out over a few days, making the gazpacho on Friday, the desserts yesterday and the rest today. I know some people said gazpacho is best fresh, but I really like letting the flavors blend for a couple of days.
