"Difficult" Thai dishes for private lesson

I'm about to embark on a long-awaited trip to Thailand, part of which will involve a one-to-one cooking class ( is the one) in which I can choose 3 dishes to learn. But I'm not a complete novice at Thai cooking so am wondering what your advice would be on what dishes would be best worth the investment in a private class.

I'm a pretty confident Chinese cook, so I would say that most of my Thai cooking strengths are related to that. I feel good with:
- Pad Thai and pad see ew
- Simple stir-fries (pad ga prao, stir-fried water spinach, fried rice)
- Steaming fish (though not more complicated steamed things)
- And to a certain degree with laap (ground meat salads)

I don't feel so hot with Thai curries so I definitely will choose that as 1 of 3. However, beyond that I'd be curious to know what Thai dishes you would consider to benefit from hands-on instruction. (Feel free to choose dishes that are not listed on the course website.)
