I know it gets a lot of coverage but I need to give my accolades anyway. Went to Difara's tonight and had some amazing pizza. Definitely in the category of the sublime which is rare to achieve. Domenico Demarco is a master and his pizza is truly a work of art. The pizza I had tonight makes Grimaldi's and Lombardi's taste like mass produced pizza in comparison. They are tasty but Difara's is in a league of its own. We had a half artichoke/half porcini mushroom pizza. The amount of complexity that Mr. Demarco is able to achieve in each element of the pizza is really remarkable. His crust has a got an incredible amount of depth and flavor to it and it is cooked to a perfect level of charred/crunchy/crusty, his tomato sauce bursts with fresh tomatoes and explosive flavors of fresh oregano and basil, and his mixture of mozzarella and grana padano adds a crucial element of saltiness to the equation. The artichokes are delicious as a topping but the fresh, sauteed porcinis are truly awesome. It is amazing how much flavor each component of the pizza possesses and yet how he manages to keep a harmonious balance between all of the elements. I've been to Difara before and its been great but tonight it was phenomenal. Maybe because we ordered a fresh pie and usually when you get a slice they have been sitting for a little. I don't know. Get the porcini pie.
