So I've been to DiFara a few times before, but I never ordered the square slice until last night. What I noticed about it is that the sauce is entirely different from the sauce on the regular pies. It's richer, like a ragu, with clear celery and carrot flavors. Does anyone know Dom's secrets RE: that sauce? I'd eat that sauce atop a bowl of ziti every day of the week.
An aside: does walking by those other pizzerias (all Kosher) on Avenue J make anyone else sad? I wish the Orthodox all the best in pursuit of dietary purity, but don't you feel like they're missing out on works of art?
