dense heavy gummy layer cakes

I've been using Cake mix doctor recipes since her first book. since moving from NYC to Delaware, my layer cakes are heavy, dense & almost gummy. I've not altered anything I'm doing except we went from a gas oven to electric. I've heard box cake mixes are providing less content, while we are using the same quantity of other ingredients called for in recipes. Can that be the issue? How does one alter them?
