Decent chow + frozen margaritas in Port Chester?

HALP! We've been dining regularly for many years at Coyote Flaco in Port Chester, NY with an old vegetarian friend who adores frozen margaritas. (Not just their frozen margaritas in particular, but frozen margaritas in general, I think.) Unfortunately, Flaco is closed for remodeling and has not re-opened as originally planned. I'd like to be able to suggest an alternate venue for a couple hours of eatin', drinkin', and talkin'.

I'm neither a vegan nor an imbiber of frozen margaritas (though I do like 'em over ice) so I'm unsure where to go. I know Port Chester has some good Mexican; any recommendations for a place nearby with decent frozen margaritas and some vegetarian options? White Plains area would be fine, too.
