So I tried to make a chocolate glaze/ganache to drizzle over the Clementine Cake I made this past weekend. Combine novice baker with 10 million different recipes on the web, plus a lack of cream (so I used 1/2 and 1/2), and it was a disaster (it looked like a foamy, oily pile of chocolate doo-doo).
I'm looking for a recipe using dark chocolate (like TJ's Pound Plus 70% Dark Chocolate), and that DOESN'T add sugar (well a little sugar is ok). I want to drizzle the glaze/ganache over my cake so it's thinly striped across the whole cake.
The only recipe I could find on Chowhound is posted below, but it's way too much sugar. I don't know how to begin picking a good recipe on the web, so I'm looking for experienced help. It's for a Christmas Day dessert.
