Cut-Up, Peeled Fruit Carts

I've seen several street vendors selling peeled and cut-up fruit (watermelon, mangos, but also, oddly, cucumbers) from wheeled carts on Lincoln Blvd. near Rose on Sundays as well as on Echo Park Blvd. near the gas station. My question is: how is the fruit sold and how is it meant to be consumed? With fingers, on the street? Brought home in a plastic baggie? Can you order a mix of fruit or just one type per "order"? Is there another ingredient on the cart that I didn't see, such as a flavoring or topping? Any advice on what looks like a healthy summer snack would be appreciated.
