La Dolce Vita answered a request for "puffy cupcakes" by suggesting a higher temp at the beginning in order to get a nice rounded top.
For a chocolate cupcake recipe calling for a 325 degree temperature, I found the following produced the best results:
Part 1.) Recommended temperature WITH convection, in this case 325 degrees, for 9 minutes (or 25 degrees above the rec temp without convection).
Part 2.) Then temperature WITH convection minus 50 degrees, in this case 275 degrees, for 11-13 minutes (or 75 degrees less than the rec temp without convection).
I found that any higher temp at the beginning not only caused the cupcakes to burn slightly, but also resulted in a flatter-topped cupcake.
