I'm spring cleaning my purse, so lots of interesting tidbits are falling out.
Last December, I went to a cocktail party where Culver duck breasts were featured. They were cooked to rare, which had the taste and texture of beef filet. They had various rubs on them to suggest different flavors, but all were consistently good.
The owner of Culver Farms was there talking duck. Did you know duck has less cholesterol than beef? Though he was quite persuasive, it still boggles the mind. Naturally, he wants people to eat more duck. However, I never had duck like he prepared his duck for this occasion. I really could eat more duck if it was as delicious as his was.
His farm is in Middlebury, IN in the Amish area. He processes ;) 14,000 ducks per day, so it is not a petit operation. He claims to supply all the ducks to Chicago's Chinatowns. He had a depth of knowledge and enthusiasm for his ducks like we see in some of the food purveyors in Chicago, like Hot Dougs et al. I really enjoyed talking to him.
IN any case, he also does mail order, which may make an excellent gift. Though I really want to go to the farm, which I'll do one of these days.
