I was invited, VERY last-minute, to a Cuban-themed Thanksgiving party. The party is actually tonight, and I don't know the host, but another guest invited me. The party is a pot-luck, and I feel compelled to bring a dish with me, but all the Cuban recipes I'm finding online take quite a bit of prep time and/or aren't suited to make-and-take.
I just know someone here will be able to save me! Is there anything Cuban that I can prepare on the fly, that isn't too involved and/or cost too much money? I'd really love to make mojitos, as I'm a bartender at a Latin restaurant and that's kinda "my thing", but I just really can't justify spending money on rum and fresh mint for 20 people I don't know. Call me a cheapskate, and then go back and realize I'm a bartender. Perpetually broke.
I was thinking of just bringing crackers with cream cheese and guava paste, as I hear that's a fairly common Cuban appetizer, and I even thought of making some quick and dirty cuban sandwich style pinwheel wraps (ham, pulled pork, pickles, cream cheese, maybe some pineapple relish) but I know that is not even close to authentic and I'm not sure how serious the host is about sticking to authentic recipes. Apparently the party is a huge deal, put on every year in a different theme.
