Critique my (first!) Pesach menu?

Hello! My husband and I are taking over hosting duties for Pesach this year, and while I've hosted large meals before this will be my first Seder as hostess. I'd like to get your opinions on my planned menu. Please keep in mind that my husband and I are... not BTs, exactly, but far more observant than either of our sets of parent (meaning at all observant) so our childhood Seders were probably done "wrong", if there is such a thing. So please let me know if there's anything weird in my plans. Oh! Also my husband will be away for work until Thursday night and I have a busy toddler, so I'm trying to do as much advance prep as possible. Tips on that would be welcome as well.

But on to the food!

Deviled eggs with vadouvan
Gravlax with cucumbers and parve sour cream

Matzo ball soup (courtesy of MIL)
Ashkenazi & Sephardic style charoset
Gefilte fish with horseradish
Roasted new potatoes
Roasted baby artichokes with lemon aioli
Braised lamb shanks

Chocolate fondue with fruit and Pesach sponge cake, maybe marshmallows if I can find decent kosher ones
