Back in England all of the chinese restaurants serve something called 'Crispy Aromatic Duck', I understand it is not an authentic chinese dish. When I did a tour of SF's china town a couple of years ago, the chinese guide had never heard of this dish and didn't know anywhere it could be found.

Basically it is duck (you can order a quarter, a half or a whole) that has been cooked (assume fried?) until the fat is really hard and crispy. The meat itself remaining moist. The server brings the duck to your table and shreds infront of you.

It is served with a steamer basket full of pancakes, matchsticks of cucumber and spring (green) onions and hoisin sauce.

you spread the sauce on the pancake, top with duck and the salad vegetables, roll and consume. yummy.

the nearest i have found in SF was a tea smoked duck at a place on chestnut i dont recall the name of. But it wasnt fried and crispy and had a smokey taste that isn't in the version I've had.

Anyone know of a place I can get a good version of what i am talking about, in SF?
