'Crisping' up (frozen) Southern Style Hash Browns

crt | Mar 9, 2008 09:41 AM

My secret for making store bought frozen southern style hash browns crispy...

Spray pan liberally with butter flavored cooking spray. Heat pan well on high. Add in potatoes. Toss potatoes in pan to throughly coat with the cooking spray and or spray potatoes over with a little more cooking spray. Toss. For seasoning I sprinkle lightly with garlic salt, add a good amount of fresh milled black pepper, and add in some Trader Joe's freeze dried garlic (bits), just a few not a whole lot. Toss. Then sprinkle on a good amount of Contadina bread crumbs, roasted garlic and savory spices variety. Then sprinkle on a fair amount of Quaker yellow corn meal. Continue cooking and tossing (often) until well browned and crisp! Of course you can use oil to cook the potatoes in, but I've found with the cooking spray they seem to turn out crispier/crunchier without a greasiness that oil seems to impart.
