Hubby's birthday and I'm going to do crepes for dessert. I've never made crepes before but I'm not too worried about the process. Many people say they freeze well so I'm thinking I can make the crepes themselves this afternoon, refrigerate, and then having them warming in a low oven while we are eating dinner.
I want to do two caramelized fillings - apples (with cinnamon and vanilla ice cream) and bananas (with a drizzle of chocolate ganache). Can I do one or both of them in advance to also refrigerate and then warm up? I'm thinking the apples - not caring if they brown too much as they'll be inside the crepes. The bananas will cook up more quickly too so I don't mind if I have to do those right on the spot.
I just didn't want to leave him having to tend to our two wee ones on his birthday while I'm in the kitchen preparing the fillings and then plating the crepes.
Any guidance would be much appreciated.
