creme caramel recipe I need it soft and smooth

Hi I make a baked custard with 12 egg yolks and 500ml of thickened cream
The recipe works very well and I bake in a water bath for 45min at 150c

But my question is some recipes I've seen for a baked custard or a creme caramel,the recipe uses 4 eggs or 8 egg yolks and 1 liter of milk or 500ml milk and 500ml cream (which I think cream work better than milk, milk never seems to set as well)
And baked in a water bath for 40-45min at 160c until set.

Will it set using so much milk
I've always been to worried to change my recipe and my custard is always a little firmer and the ones you buy in the shops are much more softer

Any advise that can help
I also never use flour or anything to thicken the mix
