How's it going? What are you learning?
This year I got the pot of herbs from TJs. They never have parsley in there so I'm buying that at the last minute. This year the light bulb finally went off and I got 2 pots of parsley from the garden center.
I also went all TJs with my veggies. Everything (but the potatoes) is peeled, cored, cleaned, seeded, stems X'd, etc. and sealed in vacuum bags so all I'm doing is opening bags to steam, roast, sauté and so on. For the first time I did my apple pie filling last night. It's going to go brown as the apples roast anyway. So that's in a vacuum bag too.
I'm also doing dressing instead of stuffing this year. Heresy in my house! But I read that if I put turkey skin on the top it will self-baste and taste like stuffing. I had to buy a half-turkey breast to get the skin, but I boned it and froze the meat. The bones are simmering into stock with the neck from my whole bird.
How about you? Love to hear all about your tips and experiments.
