I was down at SLM and decided that a corned beef dinner would be on the menu this weekend. It's been a while since I've made it, and I can't remember where I bought my last one (it was SLM). Where would you recommend for getting a brisket of the best texture and most complex and balanced spicing? NB: It doesn't have to be from SLM - that just happened to be the venue of my epiphany.

Bonus question: Wine pairing? The best I've had was a Pinotage that I'd socked away, but there isn't much of a selection at the moment. (Actually, there rarely is.) I'm not a Zinfandel enthusiast generally, but I've found that that works well. I'm open to suggestions.
