My field-hockey-playing niece asked if I'd bake corn bread to take to a chili-themed tailgate dinner after her game on Saturday and of course I said yes. Then I thought to ask how many people would be there. She thinks perhaps 60. Possibly more. Oy!
The first problem is that I've never baked corn bread in my life. I figure it can't be all that difficult to follow a recipe, but does anyone have a good, fool-proof one to offer? Or are there any store-bought mixes that are really good?
The second problem is that I have to do the baking on Thursday evening (after we return from our Windows of Hope dinner, naturally) because we're leaving for Maryland right after work on Friday. Any advice on keeping it fresh for two days?
