We were at Costco this past weekend and found Copper River salmon at an amazing $9.99 per pound. Yes it's a bit higher than farmed, but I had just seen it at Whole Foods at $16.99 a pound (I declined, a bit too high for me). There is a huge shortage of wild salmon this season, Copper River in particular so if you're a fan, go to Costco now. It's a short season.

We bought a piece, around 25 ounces, let it marinate in a soy-maple syrup-ginger-lime mixture for about 30 minutes (longer might be better) and grilled it over charcoal. The marinade boils down to a syrupy glaze or sauce to be spooned over the finished dish. The fish was simply fabulous, firm and full of flavor.
