I went to a potluck last night, and one of the guests was grilling salmon she purchased yesterday at Costco for 4 bucks a pound. The fish had to be purchased whole (with head chopped off and cleaned), so she just cut the whole fish in two lengthwise, put each half in fish grilling baskets and grilled it over coals. Deep red, delicious salmon.
She bought the whole fish at the Olympia Costco. I don't know if it was a short term special, or unique to Olympia's Costco, but just in case it is still around today, I thought I would pass the tip on to the NW chow board. If you are interested, it might be worth calling your local Costco ahead of time to see if it is still available before making a special trip.
