I often use cooling racks after I take my cookies out of the oven, so that the air circulates around them while they are cooling.
I was wondering why we don't place the dough on the racks BEFORE baking, and then put the racks on the sheet pan into the oven to bake?
Would cookies come out crisper if they baked on a cooling rack? Just wondering about the physics of all this.
