Looking for cool, funky, fun eats in Glasgow

It's probably too early to be planning this, but I'm really excited! We'll be in Glasgow for 6 days in mid-May. Husband is a pescatarian, I'm an omnivore (a bit squeamish about organ meats - I'm trying to be more open minded though). I've gathered a few suggestions from here, but there's not a ton of recent Glasgow info. Things we're especially interested in:

craft beer
raw oysters
fish and chips (following that discussion already!)
simple breakfasts - coffee and pastry

We're in our 40s but tend to enjoy more college-y, art-y places vs. fine dining. Oh, and we won't have a car but are planning on using transit and taxis - staying at the Citizen M hotel.
