Cooking for one at a writers colony - ideas?

I have the wonderful opportunity to visit a writers colony next month for two weeks. I actually can't remember the last time I had the luxury of setting aside two full weeks to focus on creative work - very exciting!

I'll be using a shared kitchen, equipped pretty much like a vacation rental would be (pots, pans, refrigerator, etc.). I've browsed a number of threads about vacation cooking, but often the focus there is on cooking for a number of people, whereas this would be a cooking for one sort of situation.

My thoughts so far:
- Simple, vegetable focused meals are ideal.
- While I love to cook, I'm there to focus on writing, so it's not the time for anything extensively time consuming. It's also a shared kitchen, and I don't want to hog it.
- I'm driving, so I can do some planning beforehand and pack things with relative ease.
- I will have access to a grocery store, though I'd like to minimize trips.
