Cooking from Washoku by Elizabeth Andoh

I wanted to learn to cook Japanese food for a while now and taken Washoku out of the library not once but every time was too intimidated by unfamiliar ingredients and techniques to actually start cooking. I was hoping that one day very-very soon a Japanese cookbook will become a COTM and I would cook with others but it is not happening. So with some encouragement from BigSal I decided to start this thread and hope that others will join me.

Please remember the usual Chowhound rules about not giving exact recipes for copyright reasons.
