Cooking ribs in the oven - so much smoke

The last two times I did ribs in the oven (low and slow @ 250) sealed in foil. The ribs started smoking through the foil....and setting my fire alarm off and my house smells awful. First time, I figured fluke but second time I now figure I am doing something wrong. I think my oven temp is fine because I bake weekly with no issues with any baked goods. Any thoughts on what the issue is?
