Help! Cooking James Oseland's Chicken Rendang

We just tasted the sauce, and it is extremely bitter. We can't figure out why, and the chicken hasn't been added yet. For those of you who have made this, did you have this experience, and what is the bitter component -- galangal, fresh turmeric or lemongrass?
