Cooking with gas -- or not...

Skip2 | Nov 26, 201905:53 AM     32

My wife and I are starting to talk openly about where we might want to retire. Florida is anathema to me, but my wife has always wanted to live somewhere really warm, so this move might be her choice. Except, everywhere I look for condos/townhouses for lease, the kitchens are electric. I'm a gas guy -- I like the visual feedback of seeing the flame to judge temperature, rapid control, and the way gas works well with my collection of cast iron and carbon steel pans.

Is electric as bad as I think it is when it comes to some advance home cooking? Or just a matter of getting accustomed to it?
