Cooking fish with beer

Good morning,
I need some suggestions on utilizing beer (or wine) to cook salmon (or arctic char or the like) for a Friday night Lenten dinner. I was thinking I could make a glaze with a dark, malty beer and brown sugar, sear the salmon, and drizzle the glaze over the fish after searing. then, with a spinach gnocchi, i could have a real winning dinner.
could anyone help me with other suggestions for preparing the salmon?
