Cooking for a diabetic

My husband's grandparents will be visiting this weekend and have announced that all they want to do is "sit and talk and eat." The problem is, the grandfather is diabetic. He rarely follows his diet, often eating badly at restaurants and sneaking food, and the grandmother doesn't help (since she's the one cooking badly).

I'd like to try to make some things that will be really tasty for breakfasts and snacks. The goals are twofold - one, to not feel badly about feeding him crap, and two, to teach them that some diabetic food can be delicious and fun - not just crudites!

Does anyone have any especially creative ideas? Many thanks!
