My sister just posed a question I don't know how to answer. Her husband has a work colleague coming over for dinner and wants to make a dinner to impress. But she's not someone who cooks often, and her normal repertoire of mac and cheese or stuffed peppers isnt what she wants to make. She does a pretty good simple roast beef, but is worried she won't have enough time to cook it before dinner.
Is it possible to cook it the day before, say almost all the way, and then just finish it up the next night to get it to temperture? Thanks!
