what makes a cookbook GREAT?

my boyfriend and i got into a heated argument about this last night, and I know it's not really a resolvable issue, but I was hoping you guys could share your thoughts.

I like cookbooks that are built around an ingredient (1001 ways to cook fish, or something) and he likes cookbooks that are built around a method (Grilling! Baking! whatever). We realized also that he likes cookbooks which are really narrative - long headnotes, chatty style - while I like mine to be to-the-point and straightforward. What are your cookbook preferences? What do you think draws the line between a decent cookbook and an amazing one?
