convection roast setting but pan drippings for gravy

Recently got a range with convection bake and convection roast settings. Have used the convection roast for roast chicken and pork roast which turned out great but didn't get any dripping from the pork . I made the chicken like I normally do( potatoes in the bottom of the pan to stop so much grease splattering) but that pretty much was all the drippings I got. The manual recommends using a broiler pan with the roast setting so for the pork I put water in the bottom of a broiler pan but still seemed to get nothing after cooking but clear water with fat in it ( used maybe 1 cup water for a 6 lb roast.) Is there any way to get drippings with the convection roast setting? I want to make a turkey and want gravy. Love the crispy skin of the convection roast but would rather use the conventional bake if I can't get gravy with the convection.
