Commercial Steamer?

I need your help. In my quantity food management class, I have to prepare some steamed cauliflower using the commercial steamer (a very large steaming machine, its a Hobart brand).
I need to steam the cauliflower until it is soft enough to mash (we're making low carb shepherds pie). How long do you think I should steam it for?
