So, this may be an odd post, but I thought I'd poll my fellow hounds on the topic of chilled soup.
To me one of the strongest signs of summer is the appearance of bright, fresh and vibrant chilled soups on restaurant menus and in my kitchen.
Just last week I had dinner at Atlantic Fish company and tried a "cucumber gazpacho" garnished with lobster meat and slivered almonds. The soup was heavenly - the essence of fresh and cool cucumber. BUT, I would not necessarily consider it a true gazpacho as the soup was creamy in texture. It was delightful though.
Got me to thinking....where else can I find other delightful chilled soups for these warm summer evenings?
