cloning ollie's chicken & sauteed spinach?

Hi all,

Heaven forbid this should start a thread on the merits and detractions of Ollie's - let's agree at the outset that the place is a confounding mix of good and bad qualities...

BUT, one consistently pleasing item on the menu is the chicken w/ sauteed spinach in black bean sauce. (Or, at the Columbia location, I believe, they also have a similar dish w/ pork.)

Can anybody educate me on how you would go about cloning this dish? The sauce is clearly not the black bean sauce from a jar -- I think it's a combination of fermented black beans (which I've managed to obtain) and a salty, clear sauce. (or chicken broth?) What do I need?

Any hints would be greatly appreciated...
