my new favorite way to prepare mushrooms. I had edamame, balsamic mushrooms and bacon all needing to be eaten. I tossed some baby spinach, the edamame and some sliced red onion with olive oil, lemon juice, s & p. Topped with the mushrooms and crumbled bacon. So very good. Actually, the spinach, edamame and red onions alone were quite good and I will do this again.
Then there are these Balsamic Mushrooms that are crazy good:
And I know this is debatable, but I ignore the recipe's admonition about washing mushrooms. It just takes a few minutes longer to cook.
