I'm throwing myself a 50th birthday party in a month or so! I'm going loosely for a luau theme, just because I think it will be fun to decorate. :-)
I'd love some help with my menu, however, please. There will be around 20 of us and I'm doing all the cooking myself, so am planning make-ahead, slow cooker or on-the-grill (i.e. husband is in charge) ideas. My plans so far are kalua pork (slow cooker) with , ribs (slow cooker then on the grill) and chicken/pineapple skewers (on the grill). I plan to serve a make-ahead tropical slaw (something with coconut and fruit maybe?), a big green salad and some Hawaiian rolls, of course. I CANNOT get my head around the apparent Hawaiian staple of macaroni salad - is it as good as everyone says? I'm looking for a potato recipe that can go in the oven - I don't want to be standing over a pan. Any ideas, please?
I have a friend in charge of the dessert table (mango panacotta, key lime cream puffs, coconut pineapple tarts, big tropic fruit salad with passion fruit... etc). I'm a cake decorator by profession, so NOT looking forward to making my own cake, but what are you gonna do?!
