Cinnamon Rolls: Overnight vs Right Away

If I follow most recipes the instructions say to to make your dough, proof it for an hour, then make your rolls, and proof them one more time before baking. For the overnight recipes, everything is the same except the final stage sees them stored in the fridge for 12 hours. I get the advantage of letting them sit in the fridge overnight if you would like to save some time, but does the overnight method change the outcome?
