Choucroute Garni

My wife and I are planning to make authentic choucroute garni for this weekend, anybody have ideas about where we can get the meats/sausages needed such as smoked pork chops/ bockwurst/ blood sausage/ slab bacon etc...? also really good saurkraut? Thanks.
